Aquafaba is the starchy liquid in which beans, particularly chickpeas, have been cooked. It is also the liquid found in canned beans. It can be used in a variety of ways, including as an egg substitute. It becomes a binder when lightly whisked or whipped into soft peaks and folded into batters, such as cookies, cupcakes, pancakes, and muffins.
Ingredients
1 (15-oz) can no salt added chickpeas or
1/2 cup chickpea cooking liquid
1/4 teaspoon cream of tartar
Whipped or whisk until it is the desired consistency.
